The Doors and Cher provide the perfect lyrics for the weekend...

Enough of this desert heat already! If it's gonna be cold at night, then let the days be cooler as well! If the above forecast holds true, then The Doors' song, "Summer's Almost Gone" speaks of lower temperatures to come this weekend. And that means time to dust off that Soups & Stews recipe book that's been in storage for the better part of the year, and find a suitable filling for one of our Sourdough Bread Bowls!

Cher's 1989 hit single, "If I Could Turn Back Time" reminds us that Saturday night it's time to turn back the clocks one hour as we transition from Daylight to Standard Time. 

So sleep in on Sunday and wake up to the smell of French Toast made with our organic, gluten-neutral Cinnamon Raisin Maple Pecan Sourdough Bread and organic pastured egg. Pan-fry in ghee and top with Raw Farm Cultured Butter. Ahhh, it doesn't get any more comforting that this...



Spotlight on Janie's Mill

Part of the magic of Breadness is the organic flours we use. When I decided to add Light Rye Flour (no bran or germ) to our organic blend, I set out looking for this product in the stores. Turns out, not one company made an organic light rye flour. There were non-organic light rye flours and organic dark rye flours a plenty, but no organic light rye. This was in 2017 so I checked Amazon and found an organic light/unbleached white rye flour... shipped from England! Dove's Farm was the brand, and I used that flour as part of our blend for years.

But when the world changed in 2020, Dove's Farm stopped shipping. So I hit the research trail again. I found a mill in Canada, but the shipping was way too much. But I persisted and eventually found Janie's Mill in Ashkum, Illinois. I got a sample bag of organic light rye from them and tested it out. It was perfect! And the shipping was reasonable. So we've been using Janie's Mill Organic Light Rye ever since. Though it's only a small percentage of our flour blend, that small amount of rye (since rye is a high-sugar-content grain used to make spirits) is enough to contribute a mild sweetness to the bread! Hence one of our slogans: "Sourdough never tasted so sweet!"

The other day I received a card in my Janie's Mill light rye shipment so I thought I'd share it with you. I've enlarged each column to make it easier to read. By the end, I think you'll see that this farm/mill and their products, are as good as it gets!

 


Sourdough Stuffing for your Holiday Menu...

I've been sharing Dave Lieberman's Sourdough Stuffing Recipe with our customers since we opened the bakery in 2021. And to make this recipe the best it can be, I recommend using one of our Breadness Sourdough Stuffing Loaves! These loaves start out as our Traditional Country Loaves which we then age a couple extra days before we slice them about 1" thick, then freeze the loaves. We'll be making these loaves starting next weekend so check out the recipe and place your order next week! I almost forgot to mention, these Stuffing Loaves are specially priced!


What's on the Breadness Rack This Weekend?

We've got fresh-cured Artisan Sourdough Country Loaves and Cinnamon Raisin Maple Pecan sourdough loaves. And we've got a good stash of Sourdough Bread Bowls (frozen) and Country Petite Loaves (fresh and frozen). We also have a limited supply of Sourdough Crisps (Naked,Tuscan Herb and Applewood Smoked) but we made lots of the Cinnamon Raisin Maple Pecan Crisps!
