Here's my simple recipe for Artisan Sourdough Cheese Melt. It's fast and easy, and only takes 5 minutes to prep, then it's into the toaster oven for another 5 and you are good to go! (Give the hot dish a minute to cool, however; we don't want any burnt tongues...)
Bread: Slices of Artisan Sourdough Country Loaf (from Breadness, of course...)
Cheese: Slices of the above Raw Farm Cheddar, or try Fresh Asiago from Italy
Seasoning: Bragg Organic Sprinkle (24 herbs and spices) or Trader Joe's Everyday Seasoning
Secret Ingredient: Organic Smoked Paprika
Optional: Pasture-raised Bacon from Harvest Gathering Farm, or your fav deli meat
Place bread slices in a shallow pan that will fit in a toaster oven or conventional oven.
Place cheese slices on the bread for full coverage. Cut a piece with scissors for the odd shapes needed to complete each slice of bread.
Sprinkle the Sprinkle over all the Slices.
Sprinkle a bit of the Smoked Paprika (not too much; this spice is strong)
Add the optional protein pieces on top
Place in toaster oven using the Toast setting at maximum heat.
Depending on the size of your toaster oven, it should take 4 to 8 minutes.
When the cheese is melted and bubbly, it's done!
Using an oven mitt, take the pan out and use a spatula to transfer the slices to a plate.
