Dining with Dills

CHEF RANDALL AND PETER DILLS WITH HIS FIRST BAG OF BREADNESS!

If you're into food as much as I am, you've probably heard the name Dills. I remember Elmer Dills and his restaurant review segments on KABC TV as well as his weekly food show on KABC radio AM 790.

I was pleasantly surprised to find out that Elmer's son, Peter Dills, is following in his dad's footsteps by producing the "Dining with Dills" broadcast, and you can "tune in" to Peter's segments on his podcast which is available on Apple Podcasts, Soundcloud, Spotify, and others.

I reached out to Peter via e-mail and told him the story of how his dad back in the day had a hand in helping me find my wife! I thought it would be a good segment for his program. From Hawaii with Love...

WE'RE FEATURING 4 FLAVORS OF THESE AMAZING TROPICAL FRUIT BUTTERS

Hawaii holds a special place in my heart. Two of my sisters lived on the islands; Michele lived on Oahu, and Francie lived on Maui for 30 years where she was the Executive Director of MAPA: Maui Academy of Performing Arts.

And Cyndie lived in Waikiki for a couple of years before I even met her!

We've been to the islands several times in our lives, together and separately. The Spirit of Aloha is something is definitely something to experience.

So when Lisa Grabow (the maker of the tapenades we carry at the bakery) heard we were looking for new jams to replace our former featured brand, she told me about a place in Hawaii (the big island) that made an unbelievable Guava Fruit Butter.

In Hawaiian, "Liko Lehua" translates to "Young Lehua" or "Lehua Bud" in English. The term refers to the young buds of the ʻōhiʻa lehua tree, which are known for their vibrant red color and are an important part of Hawaiian culture and natural heritage.

I contacted Liko Lehua and after an e-mail conversation the owner, Dawn, we received a box of samples to try.

All I can say is WOW! These tropical fruit butters are unlike anything I have ever tasted! The concept of combining butter and fruit to make a topping is unique to me. Each of the flavors I tasted were outstanding. I wanted to carry them all, but I settled on 4 flavors, and we received our first shipment earlier this week.

I'm looking forward to offering samples of these flavors and I'm interested to find out which flavors resonate with you: Guava, Tahitian Lime, Lilikoi (Passion Fruit) and Kona Coffee.

These are not available on our website just yet, but they will be as soon as I can find the time to create the product pages (among the myriad hats I wear, I'm also the webmaster for breadness.com and 36 other client websites!).

Breadness Brûlée Muffins...

After Chef Enrique of Amor a Mi started buying our bread for making their killer Avocado Toast, I asked him what he was going to do with the end pieces that weren't big enough to use for that dish. He told me, probably make Bread Pudding. This was a dish I had little reality on, so later, I did some research and thought I'd get creative!

Once again, I was led down a path of culinary discovery and the result is our new Breadness Brûlée Muffins!

I started by making a traditional Bread Pudding with our organic artisan sourdough bread soaked in a custard consisting of milk, eggs, vanilla, cinnamon, butter and brown sugar replacement (our monk fruit/allulose blend). I used our organic coconut beverage for the milk. The result was very good, but it wasn't what I was looking for.

I thought, "What if the custard was more like Creme Brûlée?"

So for the next recipe, I used Raw Farm Whole Milk and Raw Farm Heavy Cream. Everything else was the same.

That was better than version 1. But I had to see what would happened if I used no milk and only heavy cream. (Keep in mind that each sample batch made 13 muffins and we had to taste them ourselves and offer fortunate customers samples as well!)

When batch 3 came out of the oven, it was like heaven. The Creme Brûlée custard combined with our sourdough bread, baked to perfection, made a most wonderful dessert that just happened to be healthy, too!

You'll just have to taste this for yourself and see what I'm talking about! (One thing that technology hasn't figured out yet is how to give actual food samples you can taste, from your phone, tablet or computer screen! The Star Trek replicator has not yet arrived: "Tea, Earl Grey, hot," said Captain Picard...)
